Ahhhhhhhh! I am so completely active lately.

Today I competed inside a Chinese take-out cook-off. It was amazing to see the come out and all of the creative dishes.

We were necessary to produce 250 samples. I know… that is clearly a lot of freakin’ samples! I spent my Sunday evening chopping, dicing, and listening to Bon Iver. I had been totally within the zone. There’s something about the mix of music and food that leaves me feeling totally content. After all, I REALLY LIKE creating dishes a lot more than anything on the planet. Music tunes out the rest. I end up being happiest in my own brain considering flavor combinations.

Even though my dish didn’t win, I’m in fact extremely happy I competed. Interacting with others with the same enthusiasm for food makes me feel like I might end up being actually normal. Because I’ve a strange feeling that watching the meals Network and grocery shopping on a regular basis isn’t? I dunno… I’m just doing my thing.

Right now I can tell you a very important factor. All I want to perform is loosen up and eat a big huge bell pepper filled with goodness and dripping in enchilada sauce. Life is totally bonkers right now… in a good way! SO MUCH is going on. Hopefully I will have some fascinating news to share soon. But probably we should talk about this another time? Just look at these. One of my favorite things I’ve made in a while. I swear all it requires is one bite and you’re in a world full of deliciousness. Which was a serious statement incidentally.

Mexican Spices. OMG. What else?

In my world they are a dream come true. They’re savory, healthy, roasted, and basically just FREAKIN’ AMAZING. Merging chicken breast & quinoa with enchilada sauce and stuffing it inside a pepper is probably one of the best decisions I’ve ever made.

Please get on this level beside me. Seriously… somebody needs to.

Enchilada Chicken & Quinoa Stuffed Bell Peppers

3 bell peppers, cut in two and seeded

1 cup prepared quinoa

1/2 cup cilantro, plus much more for garnish

1/2 onion, diced

1/2 teaspoon dark pepper

1/2 cup crimson enchilada sauce, plus much more for topping (I typically use 1 can)

1/2 cup low fat cheese of your decision (I love colby jack)

Directions

Preheat oven to 375 degrees F. In a large bowl combine poultry, quinoa, egg whites, onion, cilantro, garlic clove powder, cumin, sodium, pepper, and enchilada sauce. Mix well.

Stuff each pepper half with the mixture. Best pepper with 1 tablespoon of enchilada sauce and 1 tablespoon of parmesan cheese. Bake for 45 a few minutes.

Serves 6

one question…i live in Vancouver, British Columbia…anyone find out where I could find enchilada sauce? Have no idea that I’ve seen that round the grocery store…
